Grass-fed BEEF recipe- Meatballs with roasted REDS!



This recipe is inspired by the color red. Well...... red onions are cheap, Mike gave me cranberries :), I got 2 pounds of strawberries for 2 bucks, and I'm in love with beets....



RECIPE
Meatballs: Ground grass-fed beef, egg, fennel, celery
Veggies/fruits: Strawberries, cranberries, red onion, beets, garlic
Spices/oils: Sage, basil, olive oil (I forgot black pepper)
Roast it all together at 400 degrees for about half an hour.
Mmm mmm good! I think I could have thrown some red apples and pomegranate seeds in.... nah, that is getting craaaazy!
EAT YOUR VEGGIES (AHEM, YES, LOVE YOURSELF!!)

  1. Oh yeah and I threw in 1 orange for the hell of it... could have been a grapefruit (yes, going with the color scheme, no I am not OCD!) but you really cannot taste the citrus so if you go for it just do zest...

  2. A note for ya'all- strawberries do not roast well, they fall apart a little, so I suggest throwing the strawberries in for the last 5-10 minutes or simply mixing them in at the end, raw, or just eat them for dessert....
